Natalie Schultz, founder and head pastry chef of Fig Tree Patisserie, established the bakery with a passion for French Pastry and a nod to her grandparents’ love for baking and their homegrown fig trees. Fig Tree specializes in macarons, custom cakes, as well as vegan, gluten-free, and keto options, while also showcasing Schultz’s Sicilian heritage. Having built a loyal following, Schultz sought to expand her presence and strengthen her ties to the Buffalo community, leading her to secure a larger space. Graduating from Niagara Falls Culinary Institute in 2017, Schultz has collaborated with various small local and women-owned businesses throughout her career. With a background as a competitive swimmer, Schultz is driven by a desire to set new records and constantly surpass her own achievements, as evidenced by her impressive portfolio featured on Instagram and Facebook (@figtreepatisserie).
