The Man Behind the Beer

Buffalo Olde Brewery is led by Tom, whose life has been steeped in a love for exceptional beer. Growing up in Portland and Denver, two American craft beer capitals, Tom’s passion for brewing ignited early and flourished in 1988 when he began brewing at Wynkoop Brewing Company during his college years. Over time, Wynkoop became one of the largest brewpubs in the world, and it was there that Tom cultivated his talent for creating diverse ales, lagers, ciders, and meads.

With over three decades of experience, Tom has designed, installed, and managed award-winning breweries across the United States and consulted worldwide in places like the Caribbean, Mexico, Guatemala, and Taiwan. He has served on the board of the Brewers Association, judged prestigious beer competitions like the Great American Beer Festival and World Beer Cup, and shared his expertise as a speaker at Craft Brewers Conferences.

Now at Buffalo Olde Brewery, Tom wears the rubber boots once again, brewing clean, high-quality beers that capture both new and traditional flavors. For him, beer is more than just a beverage—it’s the elixir that sparks conversation, brings people together, and builds community.
